My Virtual Cookbook: (Almost) Just like Mom’s Meatloaf!

Having been raised in the south I’m a sucker for some good ol’ home cooked comfort food. And if your family was anything like mine, many times that included Mom’s Meatloaf. This recipe is very similar to my mom’s but I added a couple of ingredients and bake them in mini loafs, since I’m clearly too impatient to wait for a whole loaf to cook (1 hour is a crazy long time when you’re hungry!). Truly a dish for the home sick; read, bake and relish in the salty aromas of this hearty homestyle entree.


1 lb lean ground beef

1/2 packet McCormicks Meatloaf seasoning

1 egg

1 slice of white bread crumbled

1/4 cup of milk

1/4 cup of Worcestershire sauce

1/3 chopped onion


Mix all of the ingredients above in a large bowl. The easiest way to do this in my opinion is with a set of clean and washed hands. Form the meat mixture into 4 or 5 small loaves. Place on a foil covered baking sheet and bake at 375* for 30 minutes. Best when served with potatoes of most any form : )
