My Virtual Cookbook: Homemade Healthy Chicken Nuggets

This recipe is GREAT for anyone who has kids or is just a kid at heart. You get the delicious and easy snackability of chicken nuggets without all the grease and saturated fats. This quick and simple recipe isn’t only a healthier choice but also makes for great leftovers and lunches.

1 lb Chicken breast diced
1/2 – 1 cup corn meal
2 TBSP vegetable oil (or sunflower oil)
salt & pepper to taste

Dice up the chicken to bite size pieces and coat all sides with the corn meal. Preheat the oil in a pan on medium heat. Toss cornmeal coated chicken into the pan and season with salt & pepper. The chicken should cook pretty quickly but be careful to not burn the cornmeal before the inside is cooked. Voila! Easy health conscious chicken nuggets!

What really makes this little entrée fun is coming up with dipping sauces. Let the kids pick and choose or combine some of their favorite dips to personalize the meal and get them involved.

  2. I would have never thought of using cornmeal for chicken nuggets. These look easy and healthy! And yes, I’m just a kid at heart 🙂
