When I titled this “Spicy Beef Tips” I wasn’t joking around, this is pretty dang hot. Take note that when using the chipotle peppers to use a proportionate amount to how much heat you can handle. Other than the potential dragon side effects (breathing fire) warning, this recipe was delicious and quite simple! It’s a rendition of one of the recipes posted by the Pioneer Woman. Mine’s much lower maintenance ; )
- 1 Tbsp Vegetable or Olive Oil
- 1ish pounds Stew Meat
- 1/3 – 1/2 can (11 Ounces) Chipotle Peppers In Adobo Sauce
- 2 cups Low-sodium Beef Broth
- 2 cloves Minced Garlic
- 1/2 Tbsp Cumin
- Cheddar Cheese
- 1 Pkg pre-made Polenta
- 1/2 cup of Milk
- 1 Tbsp of Butter or Margarine
- Salt & Pepper to taste
Beef Instructions:Heat oil and garlic over medium heat and add stew meat. Cook stew meat for 2-3 minutes until brown. Add cumin, salt and pepper.
Next pour in the chipotle peppers in adobo sauce along with the beef broth. Stir and increase heat until the mixture starts the simmer. Pour the contents into a crockpot and cook on low for 4 hours.
Polenta Instructions: Mash up the polenta in a bowl and add in milk and butter. Heat on low or microwave in 20 second increments stiring often.
Serve polenta topped with cheese then smother with beef tips and spicy sauce. Bon appetit!
